Spicy Garlic-Ginger Pappardelle: A Bold Twist on Homemade Pasta

Spicy Garlic-Ginger Pappardelle: A Bold Twist on Homemade Pasta
Ingredients:
1 3/4 cups of all-purpose flour (plus more for dusting)
2 large eggs
1 egg yolk
3 tbs of Garlic-Ginger Chili Crisp (see recipe)
1/2 tsp of salt
Instructions:
In your Kitchen Aid Mixer bowl mound, the flour and make a well in the center.
Crack the eggs and egg yolk into the well, then add the salt and Ginger Chili Crisp.
Using your dough hook, mix until the dough forms a ball. (Be sure to scrape the sides fully incorporating the flour.)
Knead for approximately 8-10 minutes until it becomes smooth and elastic. If the dough is too sticky, sprinkle with a bit more flour.
Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
Dust your work surface with flour and roll the dough to your desired thickness, using a rolling pin or pasta machine.
Cut the dough into pappardelle (approx.. 1-inch-wide strips).
Bring a large pot of salted water to a boil and cook the fresh pasta for 2-4 minutes, or until it floats to the surface.
Drain the pasta
Add butter and crushed red pepper or top with additional Garlic-Ginger Chili Crisp.
