Yukon Mashed Potatoes

Yukon Mashed Potatoes
Serves 4
Ingredients:
6 Yukon Potatoes
1/4 stick of butter
1/3 cup of sour cream
1.5 tbs of cream cheese
1 tsp of Better than Boullion roasted chicken paste
Salt
Instructions:
Wash, peel, and chop potatoes into approximately 1.5-inch pieces.
In a saucepan, mix chicken paste and a generous amount of salt. Add potatoes (the water level should be 2 inches above the potatoes). Boil on medium-high heat until potatoes are easily pierced with a fork. Drain. In the still-warm saucepan add butter. Whip sour cream and cream cheese. Add potatoes and HALF the melted butter. Whip together. Scop into a bowl, and top with remaining butter.
