House of Hen’s Brown Sugar and Tricolor Pepper Meatloaf combines sweet brown sugar with tangy ketchup and a hint of garlic tarragon for a rich, unforgettable flavor. With colorful peppers and a crunchy “Little Toast” finish, this meatloaf is a cozy yet elevated meal!

Meatloaf with Mashed Potatoes and Green Beans

Brown Sugar and Tricolor Pepper Meatloaf

Serves 5

Ingredients:

  • 1 lb ground chuck

  • 1.5 tsp of garlic tarragon salad dressing (see recipe) or vegetable oil

  • 1/2 cup of chopped tricolor peppers

  • 1/2 cup of chopped onions

  • 1 rounded cup of Heinz ketchup

  • 1 package of French onion soup mix

  • 1.5 tbs of Leah and Perrin’s Worchester sauce

  • .5 tsp of garlic salt

  • .5 tsp Lawry’s seasoning salt

  • 1 tsp course ground pepper

  • 1/3 cup of brown sugar (NOT PACKED)

  • 1 cup of broken little toast (see recipe)

  • 1 cup of cubed FRESH baguette

  • 1 dried parsley for garnish (optional)


Instructions:

Preheat oven to 425 degrees Fahrenheit.

Brush casserole dish with garlic tarragon salad dressing.

Brown peppers and onions with remaining salad dressing. Allow to cool completely.

Mix ketchup, soup mix, Worchester sauce, garlic salt, ground pepper, and brown sugar.

LIGHTLY mix, meat, toast, bread, egg, and HALF of your sauce.

Top with remaining sauce, spreading evenly.

Dried Parsley to garnish.

Refrigerate for a few hours.

Bake for approximately 45 minutes or until the edges are crisp and the top is bubbly. Allow to rest for 10-15 minutes before serving.

This meatloaf tastes even better the next day.
