Florida Brine

Ingredients:

  • 6 cups of water

  • 4 cups of pineapple juice

  • 1/2 cup of vinegar

  • 1 cup of salt

  • 1/2 cup of brown sugar

  • 1 lemon (quartered)

  • 1 lime (quartered)

  • 1/2 cup of fresh cranberries

  • 1 star anise

  • 1 tbs Kinder Habenero Pineapple Seasoning

  • 1/2 tsp of ground clove

  • 1 tsp of whole black pepper

  • 1 small apple (quartered)

  • 1 small cut jalapeno

Instructions:

Mix.

Fully submerge bird in brine.

Refrigerate for 8-12 hours.

Remove from brine, rinse, and pat dry.

Season and cook as normal.
