Not Chicken Pizza: Crispy Chicken Parmesan Tortilla
Our Not Chicken Pizza is inspired by my first date with my husband. Covid restrictions had just eased allowing outdoor seating tables 6 feet apart with masked guests and staff. Discussing pizza toppings, we laughed when at the same time we each said “Anything, but chicken”. When the waiter came, we asked for recommendations for any pizza that did NOT include chicken. Misunderstanding due to our masks, the waiter named every chicken pizza they served. With great mirth, my now husband and I locked eyes and placed our order. Within the first 5 minutes, we had our first inside joke. Years later we still say this was one of the moments when we each “knew”.

Not Chicken Pizza: Crispy Chicken Parmesan Tortilla
Ingredients:
Chopped or Shredded Cooked Chicken
Mission Flour Tortilla
Ald’s Priano Four Cheese Spaghetti Sauce
Aldi’s Emporium Selection Fresh Mozzarella Ball
Aldi’s Emporium Selection Shredded Parmesan
Sauteed Mushrooms
Chopped Fresh Spinach
Vegetable Oil
Garlic Salt
Instructions:
Lightly coat the tortilla with oil.
Lightly spread spaghetti sauce on the tortilla.
Add chicken, spinach, mushrooms, mozzarella, and parmesan.
Add Garlic Salt to taste.
Bake at 350 degrees until the cheese is melted and the tortilla is crispy.
