Cherry-Thyme Spatchcocked Roast Chicken

Ingredients:

  • 1 Young Chicken approximately 5-6 lbs

  • Aldi’s Specially Selected Cherry and Rosemary Spread

  • A Small Handful of thyme

  • 1 Onion Quartered

  • Lawry’s Seasoning Salt to Taste

  • McCormick Grill Mates Hamburger Seasoning to Taste

  • Freshly Ground Peppercorn to Taste

  • Thyme for Garnish.

Instructions:

Pre-heat to 350 degrees.

Remove neck from chicken center.

Place chicken breast side down with legs closest to you.

Using a sharp knife cut on either side of the backbone to the top of the chicken.

Remove spine (save for later if making stock)

Spread chicken.

Brush underside of chicken w 2 tablespoons of cherry rosemary spread.

Pat chicken dry.

Season chicken with Lawry’s. hamburger seasoning, and pepper.

Add onion, rosemary, and thyme to center of roasting pan.

Place chicken breast side up over veggies.

Cover chicken with a paper towel.

Refrigerate for several hours. This creates a crisp skin.

Bake at 350 degrees for 20 minutes.

Rest 15 minutes before carving.
