Garlic Chicken With Roasted Tomato and Goat CHeese

Ingredients:

  • Large Chicken Breast

  • 1/4 Cup of Garlic Tarragon Salad Dressing (See Recipe)

  • Emporium Selection Garlic and Herb Goat Cheese

  • 1 Cup of Cherry Tomatoes

Instructions:

Preheat the Oven to 375 degrees Fahrenheit.

Place your chicken, breast side up diagonally on your cutting board.

Slice chicken horizontally every half inch WITHOUT scoring completely through, repeat this step vertically.

Place chicken and tomatoes in a large Ziplock bag adding salad dressing on top of chicken into the checkered patterned slices.

Marinate for 5-6 hours.

Bake for 30-40 minutes until cooked thoroughly.

Generously add goat cheese to the chicken, encouraging the filling of the slices.

Allow to rest for 5-10 minutes.

Plate chicken.

Add the broth naturally left in the pan on top of the chicken.

Pile tomatoes on top and serve.
