Three baked eggs with cheese, mushroom, and green onion served with a side of bacon.

Baked Eggs

Ingredients:

Eggs Sour Cream

Cream Cheese (optional) Mushrooms

Onions Shredded Colby Jack

Butter Oil

Preheat Oven at 385F.

Instructions:

Combine 1 rounded tablespoon of sour cream per egg, salt, and pepper to taste in a bowl.

Whisk until smooth creamy yellow or orange (farm fresh eggs) consistency develops.

Melt equal parts butter and oil - enough to fully coat your pan, leaving a very shallow “puddle”.

Add half your egg mixture.

Top with fresh mushrooms, green onions, and shredded cheese (Additional options - cream cheese, lobster/crab, tomato, and spinach).

Add the remaining egg and a second layer of veggies, adding the shredded cheese last.

Bake for approximately 20 minutes or until the top has puffed and the egg has a light, but firm spring when gently pressed.
