Garlic Lime Yeast Biscuits

Ingredients:

  • 1 tablespoon fresh lime juice

  • 2 tablespoons rice vinegar

  • 1/4 cup vegetable oil (plus more for brushing)

  • 1 large egg

  • 2 large egg yolks

  • 2 cups all-purpose flour

  • 1 teaspoon salt

  • 1/2 cup warm water (about 110°F or 43°C)

  • 1 teaspoon baking soda

  • 2 teaspoons active dry yeast

  • Garlic salt to taste

  • Dried parsley for garnish

Instructions:

  1. Activate Yeast:

    • In a small bowl, combine warm water, yeast, and 1 teaspoon of sugar (optional for activation). Let it sit for about 5–10 minutes until frothy.

  2. Prepare Dough:

    • In a large mixing bowl, whisk together flour, salt, and baking soda.

    • In a separate bowl, mix the egg, egg yolks, lime juice, rice vinegar, and vegetable oil. Add the yeast mixture once it is frothy.

    • Combine the wet and dry ingredients, mixing until a dough forms.

  3. First Rise:

    • Knead the dough on a floured surface for about 5 minutes until smooth. Place it in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm area for 30 minutes.

  4. Second Rise:

    • After the first rise, gently deflate the dough and shape it into a small rectangle. Cover it again and let it rise for another 30 minutes.

  5. Preheat Oven:

    • Preheat your oven to 375°F (190°C).

  6. Prepare for Baking:

    • Once the dough has risen again, transfer it to a baking sheet lined with parchment paper. Flatten dough until approximately 1.5 to 2inches thick. Brush the top lightly with vegetable oil, garlic salt, and dried parsley to taste.

  7. Bake:

    • Bake in the preheated oven for 20–25 minutes or until golden brown and a toothpick inserted in the center comes out clean.

  8. Cool and Serve:

    • Allow the biscuits to cool on a wire rack for a few minutes before serving.
