Garlic Lime Biscuits
These freshly baked biscuits bring a vibrant flavor of fresh lime combined with savory garlic salt creating a delightful contrast. Light and fluffy, garnished with a sprinkle of dried parsley, these little beauties are perfect for brunch.
Garlic Lime Yeast Biscuits
Ingredients:
1 tablespoon fresh lime juice
2 tablespoons rice vinegar
1/4 cup vegetable oil (plus more for brushing)
1 large egg
2 large egg yolks
2 cups all-purpose flour
1 teaspoon salt
1/2 cup warm water (about 110°F or 43°C)
1 teaspoon baking soda
2 teaspoons active dry yeast
Garlic salt to taste
Dried parsley for garnish
Instructions:
Activate Yeast:
In a small bowl, combine warm water, yeast, and 1 teaspoon of sugar (optional for activation). Let it sit for about 5–10 minutes until frothy.
Prepare Dough:
In a large mixing bowl, whisk together flour, salt, and baking soda.
In a separate bowl, mix the egg, egg yolks, lime juice, rice vinegar, and vegetable oil. Add the yeast mixture once it is frothy.
Combine the wet and dry ingredients, mixing until a dough forms.
First Rise:
Knead the dough on a floured surface for about 5 minutes until smooth. Place it in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm area for 30 minutes.
Second Rise:
After the first rise, gently deflate the dough and shape it into a small rectangle. Cover it again and let it rise for another 30 minutes.
Preheat Oven:
Preheat your oven to 375°F (190°C).
Prepare for Baking:
Once the dough has risen again, transfer it to a baking sheet lined with parchment paper. Flatten dough until approximately 1.5 to 2inches thick. Brush the top lightly with vegetable oil, garlic salt, and dried parsley to taste.
Bake:
Bake in the preheated oven for 20–25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
Cool and Serve:
Allow the biscuits to cool on a wire rack for a few minutes before serving.
